Ingredients
1 pound large shrimp, peeled and deveined
1/2 pound pancetta, thinly sliced
1/4 cup olive oil
1/4 cup cilantro, chopped
1/2 cup red onion, finely chopped
1 tablespoon chipotle powder
1/4 cup white wine vinegar
Salt and pepper to taste
Directions
Preheat the oven to 375 degrees Fahrenheit.
Wrap each shrimp in a piece of pancetta and secure with a toothpick.
Place the wrapped shrimp on a baking sheet and bake for 15 minutes.
While the shrimp is baking, heat the olive oil in a medium saucepan over medium heat.
Add the cilantro and red onion and sauté until softened, about 5 minutes.
Add the chipotle powder and white wine vinegar and cook for an additional 3 minutes.
Remove from heat and season with salt and pepper to taste.
Once the shrimp is done baking, remove from the oven and drizzle with the chipotle vinaigrette.
Serve the shrimp with the cilantro oil and enjoy!
