Garlicky Quinoa and Garbanzo Bean Salad

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup garbanzo beans
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, minced
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Simmer for 15 minutes, or until the quinoa is tender.
  2. Drain the garbanzo beans and rinse with cold water. In a small skillet, heat the olive oil over medium heat. Add the garlic and sauté for 2 minutes. Add the garbanzo beans and sauté for an additional 2 minutes.
  3. In a large bowl, combine the cooked quinoa and garbanzo beans. Add the parsley, lemon juice, salt, and pepper and stir to combine.
  4. Serve the salad warm or cold.
