Ingredients
- 1 sheet of frozen puff pastry, thawed
- 2 tablespoons of olive oil
- 1 large red onion, thinly sliced
- 1 teaspoon of sugar
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of balsamic vinegar
- Salt and pepper, to taste
- 4 ounces of goat cheese, crumbled
- 2 tablespoons of freshly chopped parsley
Directions
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
- On a lightly floured work surface, roll out the puff pastry into a 12-inch circle. Place the puff pastry on the prepared baking sheet.
- In a large skillet, heat the olive oil over medium-high heat. Add the red onion and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes. Add the sugar, garlic, thyme, balsamic vinegar, salt and pepper. Cook, stirring occasionally, for an additional 5 minutes.
- Spread the onion mixture evenly over the puff pastry, leaving a 1-inch border. Sprinkle with the goat cheese and parsley. Bake until the pastry is golden brown, about 20 minutes.
- Remove from oven and let cool for 10 minutes before slicing and serving.
