2 lbs. fresh green beans, trimmed and cut into 2-inch pieces
1 onion, diced
2 cloves garlic, minced
1 lb. mushrooms, sliced
1/2 cup butter
1/4 cup all-purpose flour
2 cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Directions
Preheat oven to 350 degrees F. Grease a 9x13 baking dish.
Bring a medium pot of salted water to a boil. Add the green beans and cook for 4-5 minutes, until just tender. Drain and set aside.
In a large skillet over medium heat, melt the butter. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
Add the mushrooms and cook for another 5 minutes, stirring occasionally.
Sprinkle the flour over the mixture and stir until well combined. Slowly whisk in the heavy cream and bring to a simmer. Simmer for 5 minutes, stirring occasionally, until the sauce has thickened.
Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
Add the cooked green beans to the sauce and stir until well combined. Pour into the prepared baking dish.
Bake for 25 minutes, until bubbly and golden brown. Serve hot.
