Ingredients
- 2 lbs. fresh green beans, trimmed and cut into 2-inch pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb. mushrooms, sliced
- 1/2 cup butter
- 1/4 cup all-purpose flour
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F. Grease a 9x13 baking dish.
- Bring a medium pot of salted water to a boil. Add the green beans and cook for 4-5 minutes, until just tender. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
- Add the mushrooms and cook for another 5 minutes, stirring occasionally.
- Sprinkle the flour over the mixture and stir until well combined. Slowly whisk in the heavy cream and bring to a simmer. Simmer for 5 minutes, stirring occasionally, until the sauce has thickened.
- Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
- Add the cooked green beans to the sauce and stir until well combined. Pour into the prepared baking dish.
- Bake for 25 minutes, until bubbly and golden brown. Serve hot.
