Salmon Loaf with Roasted Red Peppers

Ingredients

  • 1 ½ pounds boneless, skinless salmon fillets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cups cooked brown rice
  • 1 cup roasted red peppers, chopped
  • 1/3 cup grated Parmesan cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet over medium heat, heat oil. Add onion and garlic; cook and stir until onion is tender, about 5 minutes. Add oregano, parsley, salt and pepper; stir to combine.
  3. Place salmon in a large bowl and add onion mixture; mix gently to combine. Add rice, red peppers and Parmesan cheese; mix gently to combine.
  4. Transfer mixture to a 9x13 inch baking dish. Bake for 20 minutes, or until salmon is cooked through and internal temperature reaches 145 degrees F (63 degrees C).
