In a large skillet over medium heat, heat oil. Add onion and garlic; cook and stir until onion is tender, about 5 minutes. Add oregano, parsley, salt and pepper; stir to combine.
Place salmon in a large bowl and add onion mixture; mix gently to combine. Add rice, red peppers and Parmesan cheese; mix gently to combine.
Transfer mixture to a 9x13 inch baking dish. Bake for 20 minutes, or until salmon is cooked through and internal temperature reaches 145 degrees F (63 degrees C).
