Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large, very ripe bananas, mashed
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup semi-sweet chocolate chips
Directions
- Preheat oven to 350 degrees F (175 degrees C)
- Lightly grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mash the bananas and mix in the oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the chocolate chips.
- Fill the muffin cups about 3/4 full.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool in the pan for 5 minutes, then turn out onto a wire rack to cool completely.
