Ingredients
1 large sweet potato, peeled and cut into cubes
1 tablespoon olive oil
1/2 onion, diced
1 clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 (15-ounce) can black beans, drained and rinsed
1/2 cup cooked quinoa
1/2 cup panko breadcrumbs
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
4 hamburger buns, toasted
Toppings of your choice (lettuce, tomato, onion, etc.)
Directions
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
In a medium bowl, toss the sweet potato cubes with olive oil, salt and pepper.
Spread the sweet potatoes onto the prepared baking sheet and bake for 15-20 minutes or until tender.
Meanwhile, heat a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the chili powder and cumin and cook for another minute.
Add the black beans and cooked sweet potato cubes to the skillet and mash with a potato masher or fork.
Add the quinoa, breadcrumbs, and cilantro and mix until combined.
Form the mixture into four patties and cook in the skillet for 3-4 minutes per side or until heated through.
Serve the burgers on toasted hamburger buns with your favorite toppings.
