Black Bean Burgers with Sweet Potato

Ingredients

  • 1 large sweet potato, peeled and cut into cubes
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 4 hamburger buns, toasted
  • Toppings of your choice (lettuce, tomato, onion, etc.)

Directions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the sweet potato cubes with olive oil, salt and pepper.
  3. Spread the sweet potatoes onto the prepared baking sheet and bake for 15-20 minutes or until tender.
  4. Meanwhile, heat a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the chili powder and cumin and cook for another minute.
  6. Add the black beans and cooked sweet potato cubes to the skillet and mash with a potato masher or fork.
  7. Add the quinoa, breadcrumbs, and cilantro and mix until combined.
  8. Form the mixture into four patties and cook in the skillet for 3-4 minutes per side or until heated through.
  9. Serve the burgers on toasted hamburger buns with your favorite toppings.
