Ingredients
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
2 cups chicken broth
1 can (14.5 ounces) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups cooked chicken, shredded
1 cup cooked white rice
1/4 cup chopped fresh parsley
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
Add the chicken broth, diced tomatoes, oregano, basil, salt, and pepper. Bring the soup to a boil, reduce the heat, and simmer for 10 minutes.
Add the chicken and rice and simmer for 5 more minutes.
Stir in the parsley and remove from heat. Serve the soup hot.
