Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded
- 1 cup cooked white rice
- 1/4 cup chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
- Add the chicken broth, diced tomatoes, oregano, basil, salt, and pepper. Bring the soup to a boil, reduce the heat, and simmer for 10 minutes.
- Add the chicken and rice and simmer for 5 more minutes.
- Stir in the parsley and remove from heat. Serve the soup hot.
