  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1 cup cooked white rice
  • 1/4 cup chopped fresh parsley


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  3. Add the chicken broth, diced tomatoes, oregano, basil, salt, and pepper. Bring the soup to a boil, reduce the heat, and simmer for 10 minutes.
  4. Add the chicken and rice and simmer for 5 more minutes.
  5. Stir in the parsley and remove from heat. Serve the soup hot.
