Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 small zucchini, diced
  • 2 large tomatoes, diced
  • ¼ teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and sauté for 3-4 minutes, until the onion is softened and fragrant.
  3. Add the diced zucchini and cook for another 2-3 minutes.
  4. Add the diced tomatoes, oregano, basil, salt and pepper.
  5. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the vegetables are tender.
  6. Serve warm or at room temperature.
