1 pound firm tofu, drained and cut into 1/2-inch cubes
2 large tomatoes, diced
1/4 cup balsamic vinegar
1/4 cup freshly chopped parsley
Directions
Heat the olive oil in a large skillet over medium heat. Add the garlic, red pepper flakes, oregano, salt, and pepper, and cook for 1 minute, stirring frequently.
Add the tofu cubes and cook for 8 minutes, stirring occasionally, until lightly golden.
Add the diced tomatoes and balsamic vinegar and cook for 3 minutes, stirring often.
Remove from heat and stir in the chopped parsley.
Serve hot.
