Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound firm tofu, drained and cut into 1/2-inch cubes
  • 2 large tomatoes, diced
  • 1/4 cup balsamic vinegar
  • 1/4 cup freshly chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic, red pepper flakes, oregano, salt, and pepper, and cook for 1 minute, stirring frequently.
  2. Add the tofu cubes and cook for 8 minutes, stirring occasionally, until lightly golden.
  3. Add the diced tomatoes and balsamic vinegar and cook for 3 minutes, stirring often.
  4. Remove from heat and stir in the chopped parsley.
  5. Serve hot.
