Ingredients
1 package of lasagna noodles
1 package of firm or extra-firm tofu
2 cups of ricotta cheese
2 cloves of garlic, minced
1 teaspoon of dried oregano
1/2 teaspoon of salt
1/4 teaspoon of black pepper
3 tablespoons of olive oil
1/2 cup of fresh basil, chopped
1 jar of marinara sauce
2 cups of grated mozzarella cheese
Directions
Preheat the oven to 350 degrees Fahrenheit.
In a food processor, blend the tofu until it is smooth and creamy.
In a medium bowl, mix together the ricotta cheese, garlic, oregano, salt, and pepper.
In a large skillet, heat the olive oil over medium heat. Add the tofu and cook for about 5 minutes, stirring occasionally.
Stir in the ricotta cheese mixture and the basil and cook for an additional 5 minutes, stirring occasionally.
Spread a thin layer of the marinara sauce in the bottom of a 9x13 inch baking dish. Layer the lasagna noodles on top of the sauce.
Spread the tofu-ricotta mixture on top of the noodles. Top with another layer of noodles and the remaining sauce.
Sprinkle the mozzarella cheese on top of the lasagna.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, until the cheese is melted and bubbly.
Allow the lasagna to cool for 10 minutes before serving.
