Ingredients
- 1 package of lasagna noodles
- 1 package of firm or extra-firm tofu
- 2 cups of ricotta cheese
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 3 tablespoons of olive oil
- 1/2 cup of fresh basil, chopped
- 1 jar of marinara sauce
- 2 cups of grated mozzarella cheese
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- In a food processor, blend the tofu until it is smooth and creamy.
- In a medium bowl, mix together the ricotta cheese, garlic, oregano, salt, and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the tofu and cook for about 5 minutes, stirring occasionally.
- Stir in the ricotta cheese mixture and the basil and cook for an additional 5 minutes, stirring occasionally.
- Spread a thin layer of the marinara sauce in the bottom of a 9x13 inch baking dish. Layer the lasagna noodles on top of the sauce.
- Spread the tofu-ricotta mixture on top of the noodles. Top with another layer of noodles and the remaining sauce.
- Sprinkle the mozzarella cheese on top of the lasagna.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, until the cheese is melted and bubbly.
- Allow the lasagna to cool for 10 minutes before serving.
