Ingredients

  • 2 cups shredded cabbage
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup cooked, shelled edamame
  • 2 hard-boiled eggs, sliced
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon honey
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the cabbage, carrots, bell peppers, and edamame.
  2. In a small bowl, whisk together the olive oil, rice vinegar, sesame oil, soy sauce, and honey.
  3. Pour the dressing over the vegetables and toss to combine.
  4. Add the sliced eggs and toss to combine.
  5. Season with salt and pepper to taste.
  6. Serve immediately.
