Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups diced cooked chicken
  • 1 cup cooked vegetables (carrots, peas, corn, etc.)
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup grated cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 (9-inch) unbaked pie crusts

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Stir in the flour and cook, stirring constantly, for 1 minute.
  4. Gradually stir in the chicken broth and milk. Cook, stirring constantly, until the mixture thickens and boils. Boil for 1 minute.
  5. Stir in the Italian seasoning, salt, pepper, chicken, vegetables, peas, corn, and cheddar cheese. Simmer for 5 minutes.
  6. Remove from heat and stir in the mozzarella cheese.
  7. Pour the filling into the bottom pie crust. Place the top crust over the filling and crimp the edges together.
  8. Bake for 25 minutes, or until the crust is golden brown.
  9. Allow to cool for 10 minutes before serving.
