Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sea salt
  • 2 tablespoons fresh lemon juice
  • 1/4 cup plain Greek yogurt
  • 4 large pita breads
  • 1/2 cup thinly sliced red onion
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large bowl, combine the chicken, olive oil, garlic powder, cumin, paprika, coriander, cayenne pepper, black pepper, and salt. Mix until the chicken is evenly coated. Set aside.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 7 minutes.
  3. In a small bowl, stir together the lemon juice and yogurt. Set aside.
  4. To assemble the shawarmas, place a pita bread on a plate. Spread a thin layer of the yogurt mixture onto the pita. Top with the cooked chicken, onion, cucumber, and parsley. Roll up the pita and serve.
