Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 onion, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes
  • 2 cups tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 zucchini, spiralized into noodles

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic, onion, salt, pepper, oregano, basil, and red pepper flakes. Sauté for 2-3 minutes until onion is softened.
  3. Add diced tomatoes and tomato paste. Stir to combine and cook for 5 minutes.
  4. Add shrimp to the skillet and cook for 3-4 minutes until shrimp is cooked through.
  5. Add spiralized zucchini noodles to the pan and stir to combine. Cook for 2-3 minutes until zucchini noodles are softened.
