Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups summer squash, cut into cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the garlic and onion and cook for 2 minutes, stirring occasionally.
  3. Add the squash and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
  4. Add the cheese and continue to cook for 2 minutes, stirring occasionally.
  5. Serve warm.
