Ingredients
- 2 lbs beets
- 1/4 cup white vinegar
- 3 tablespoons olive oil
- 1/4 cup freshly chopped dill
- Salt and pepper to taste
- Bring a large pot of salted water to a boil. Add the beets and boil for 15 minutes, or until tender when pierced with a fork.
