Ingredients
- 2 tablespoons olive oil
- 1 onion, minced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon freshly ground black pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1 pound firm white fish fillets, such as cod, halibut, or haddock, cut into 1-inch cubes
- 1/2 cup green olives, pitted and halved
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, paprika, ginger, turmeric, cinnamon, cayenne pepper, and black pepper and cook, stirring, for 1 minute.
- Add the tomatoes, vegetable broth, cilantro, and parsley and bring to a simmer. Cook for 5 minutes.
- Add the fish and olives and cook until the fish is cooked through, about 5 minutes.
- Serve over couscous.
