Ingredients

  • 2 tablespoons olive oil
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon freshly ground black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 pound firm white fish fillets, such as cod, halibut, or haddock, cut into 1-inch cubes
  • 1/2 cup green olives, pitted and halved

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, paprika, ginger, turmeric, cinnamon, cayenne pepper, and black pepper and cook, stirring, for 1 minute.
  3. Add the tomatoes, vegetable broth, cilantro, and parsley and bring to a simmer. Cook for 5 minutes.
  4. Add the fish and olives and cook until the fish is cooked through, about 5 minutes.
  5. Serve over couscous.
