Ingredients

  • 4 cups of kale, chopped
  • 2 tablespoons of sesame oil
  • 2 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • 1/4 cup of peanuts, chopped
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of honey
  • 1/4 teaspoon of ginger, grated
  • 1/4 teaspoon of lime zest

Directions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the garlic and red pepper flakes. Cook for 1 minute.
  3. Add the kale and peanuts. Cook for 3-4 minutes, stirring occasionally.
  4. In a small bowl, mix together the soy sauce, rice vinegar, honey, ginger, and lime zest.
  5. Add the soy sauce mixture to the skillet. Cook for 1-2 minutes, stirring constantly.
  6. Serve warm.
