Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar, for dusting

Directions

  1. Preheat oven to 350 degrees F. Grease and flour a 9-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg.
  4. Stir in the milk and vanilla extract. Add the flour mixture and mix until just combined.
  5. Stir in the lemon juice and zest.
  6. Pour the batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes before removing to a wire rack to cool completely.
  8. Dust with powdered sugar before serving.
