Ingredients

  • 6 bell peppers, tops cut off and seeded
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup tomato sauce

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, cook the ground beef until lightly browned. Drain off any excess fat, then add the onion, garlic, Italian seasoning, salt and pepper. Cook for 5 minutes, stirring occasionally.
  3. In a medium bowl, combine the cooked beef mixture, cooked rice, Parmesan cheese, and mozzarella cheese. Mix until well blended.
  4. Fill each pepper with the beef mixture, then place the peppers in a baking dish. Pour the tomato sauce over the peppers and bake for 25 minutes, or until the peppers are tender.
  5. Remove from the oven and serve hot.
