Cut the beef into 1-inch cubes and season with salt and pepper.
Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and cook, stirring occasionally, until the onions are soft and translucent.
Add the beef and cook, stirring occasionally, until the beef is browned. Add the diced tomatoes, oregano, basil, rosemary, and thyme and bring to a boil.
Reduce the heat to low and simmer, stirring occasionally, for 25 minutes or until the beef is cooked through.
