Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth, or water
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped fresh parsley
  • 1/4 cup toasted walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. In a medium saucepan, bring the wild rice and vegetable broth to a boil over medium-high heat.
  2. Reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender.
  3. Remove from the heat and let cool completely.
  4. In a large bowl, combine the cooked wild rice, onion, celery, parsley, walnuts, and cranberries.
  5. In a small bowl, whisk together the olive oil, lemon juice, mustard, salt, and pepper to make the dressing.
  6. Pour the dressing over the wild rice mixture and toss to combine.
  7. Serve the salad chilled or at room temperature.
