Ingredients

  • 1 tablespoon olive oil
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 small onion, diced
  • 1 pound chicken apple sausage, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup white wine or chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1/2 cup heavy cream
  • 1 pound penne pasta
  • 1/4 cup freshly grated Parmesan cheese, plus more for garnish
  • Chopped fresh parsley, for garnish

Directions

  1. In a large skillet, heat olive oil over medium-high heat. Add the peppers, onion, and sausage and cook, stirring occasionally, until the sausage is lightly browned, about 5 minutes.
  2. Add the garlic, salt, pepper, and red pepper flakes, and cook, stirring, for 1 minute.
  3. Add the wine or broth and stir to scrape up any browned bits on the bottom of the pan.
  4. Add the tomatoes and stir to combine. Reduce the heat to medium and cook, stirring occasionally, until the sauce is thickened, about 10 minutes.
  5. Add the cream and stir to combine. Simmer for 5 minutes.
  6. Meanwhile, bring a large pot of salted water to a boil. Add the penne and cook until al dente, about 10 minutes. Drain the pasta and return it to the pot.
  7. Add the sauce to the pot with the pasta and stir to combine. Add the Parmesan cheese and stir to combine.
  8. Serve the pasta in individual bowls and top with Parmesan cheese and chopped parsley.
