Ingredients
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup onion, diced
- 8 ounces mushrooms, sliced
- 1/4 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups milk
- 3 tablespoons all-purpose flour
- 2 cups shredded cheddar cheese, divided
- 1/2 teaspoon smoked paprika
- 2 cups dry macaroni
- 2 cups fresh spinach, chopped
Directions
- Preheat the oven to 350°F.
- In a large skillet, melt the butter over medium heat.
- Add the garlic, onion, mushrooms, thyme, salt, and pepper. Cook for 5-7 minutes, until the vegetables are softened.
- In a separate bowl, whisk together the milk and flour until smooth.
- Add the milk mixture to the pan and cook for an additional 5 minutes, stirring occasionally, until the mixture thickens and is bubbling.
- Add 1 1/2 cups of the cheese and the smoked paprika. Stir until the cheese is melted and the mixture is creamy.
- Remove the skillet from the heat and set aside.
- Cook the macaroni according to package directions.
- Once the macaroni is cooked, drain it and add it to the cheese sauce in the skillet.
- Stir in the spinach and the remaining 1/2 cup of cheese.
- Pour the macaroni and cheese into a 9x13 inch baking dish.
- Bake for 20 minutes, until the top is golden and bubbling.
- Serve warm.
