Ingredients
3 tablespoons butter
3 cloves garlic, minced
1/2 cup onion, diced
8 ounces mushrooms, sliced
1/4 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 cups milk
3 tablespoons all-purpose flour
2 cups shredded cheddar cheese, divided
1/2 teaspoon smoked paprika
2 cups dry macaroni
2 cups fresh spinach, chopped
Directions
Preheat the oven to 350°F.
In a large skillet, melt the butter over medium heat.
Add the garlic, onion, mushrooms, thyme, salt, and pepper. Cook for 5-7 minutes, until the vegetables are softened.
In a separate bowl, whisk together the milk and flour until smooth.
Add the milk mixture to the pan and cook for an additional 5 minutes, stirring occasionally, until the mixture thickens and is bubbling.
Add 1 1/2 cups of the cheese and the smoked paprika. Stir until the cheese is melted and the mixture is creamy.
Remove the skillet from the heat and set aside.
Cook the macaroni according to package directions.
Once the macaroni is cooked, drain it and add it to the cheese sauce in the skillet.
Stir in the spinach and the remaining 1/2 cup of cheese.
Pour the macaroni and cheese into a 9x13 inch baking dish.
Bake for 20 minutes, until the top is golden and bubbling.
Serve warm.
