Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a medium bowl, combine the graham cracker crumbs, melted butter, and cinnamon. Spread the mixture evenly into the prepared baking dish.
Bake for 10 minutes in the preheated oven. Set aside.
In a medium saucepan over medium heat, combine the sugar, evaporated milk, and vanilla extract. Bring to a boil and cook for 5 minutes, stirring constantly.
Pour the hot mixture over the graham cracker crust. Sprinkle with walnuts and chocolate chips, if desired.
Cool before cutting into bars.
