Ingredients
- 1 large eggplant
- 1/2 cup all-purpose flour
- 2 eggs
- 1/2 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 (24 ounce) jar marinara sauce
- 1/2 cup grated mozzarella cheese
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- Slice eggplant into 1/4 inch thick slices.
- Place flour, eggs and bread crumbs in three shallow dishes.
- Dip eggplant slices in flour, then eggs, then bread crumbs, coating each slice evenly.
- Place coated eggplant slices on the prepared baking sheet.
- Sprinkle Parmesan cheese over the top of the eggplant slices.
- Drizzle olive oil over the slices.
- Bake in preheated oven for 10 minutes.
- Flip eggplant slices over and bake for an additional 10 minutes.
- Remove from oven and top with marinara sauce and mozzarella cheese.
- Return to oven for 5 minutes, or until cheese is melted and bubbly.
