Ingredients

  • 1 large eggplant
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/2 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 (24 ounce) jar marinara sauce
  • 1/2 cup grated mozzarella cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  2. Slice eggplant into 1/4 inch thick slices.
  3. Place flour, eggs and bread crumbs in three shallow dishes.
  4. Dip eggplant slices in flour, then eggs, then bread crumbs, coating each slice evenly.
  5. Place coated eggplant slices on the prepared baking sheet.
  6. Sprinkle Parmesan cheese over the top of the eggplant slices.
  7. Drizzle olive oil over the slices.
  8. Bake in preheated oven for 10 minutes.
  9. Flip eggplant slices over and bake for an additional 10 minutes.
  10. Remove from oven and top with marinara sauce and mozzarella cheese.
  11. Return to oven for 5 minutes, or until cheese is melted and bubbly.
