Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 375F (190C). Grease a baking sheet or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cardamom, and cloves. Set aside.
  3. In a large bowl, cream together the butter and sugars until light and fluffy. Beat in egg, lemon juice, and vanilla extract until combined.
  4. Gradually add the dry ingredients to the butter mixture and mix until just combined. Do not overmix.
  5. Drop dough by rounded teaspoonfuls onto the prepared baking sheet, about 2 inches apart.
  6. Bake for 8-10 minutes, or until golden brown. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
