Ingredients

  • 9 ounces dark chocolate, chopped
  • 1/2 cup heavy cream
  • 4 eggs, separated
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1/4 cup cocoa powder

Directions

  1. Preheat oven to 350 degrees F.
  2. In a heat-proof bowl, combine chopped chocolate and heavy cream. Place the bowl over a pot of simmering water and heat until the chocolate has melted and the mixture is smooth.
  3. In a separate bowl, beat the egg yolks and sugar together until light and fluffy. Add the melted chocolate mixture and vanilla and mix until combined.
  4. In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and salt and beat until soft peaks form. Gradually add the cocoa powder and continue beating until stiff peaks form.
  5. Gently fold the egg whites into the chocolate mixture until just combined. Pour the batter into a greased 8-inch cake pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely before serving.
