Ingredients

  • 4 cups fresh or frozen raspberries
  • 1 cup sugar
  • 1 Tablespoon lemon juice
  • Optional: 2 Tablespoons pectin

Directions

  1. In a medium-sized saucepan, combine the raspberries, sugar, and lemon juice.
  2. Cook over medium heat, stirring often, until the mixture comes to a boil.
  3. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  4. If desired, stir in the pectin and continue to simmer for an additional 5 minutes.
  5. Remove from the heat and cool completely.
  6. Store in an airtight container in the refrigerator for up to 4 weeks.
