Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
2 poblano peppers, diced
1 pound tomatillos, husks removed and diced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked chicken, shredded
1/4 cup chopped cilantro
Directions
Heat the olive oil in a large skillet over medium heat.
Add the garlic and poblano peppers and cook for 2-3 minutes, stirring occasionally.
Add the tomatillos and cook for 5 minutes, stirring occasionally.
Add the cumin, chili powder, oregano, salt and pepper and stir to combine.
Add the cooked chicken and cilantro and stir to combine.
Cook for 5 minutes, stirring occasionally.
Serve with warm tortillas, if desired.
