Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 poblano peppers, diced
  • 1 pound tomatillos, husks removed and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1/4 cup chopped cilantro

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and poblano peppers and cook for 2-3 minutes, stirring occasionally.
  3. Add the tomatillos and cook for 5 minutes, stirring occasionally.
  4. Add the cumin, chili powder, oregano, salt and pepper and stir to combine.
  5. Add the cooked chicken and cilantro and stir to combine.
  6. Cook for 5 minutes, stirring occasionally.
  7. Serve with warm tortillas, if desired.
