Ingredients

  • 1 pound ground pork
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup snow peas, trimmed and halved
  • 1 cup carrots, sliced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 8 ounces medium egg noodles

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and cook until it's no longer pink, about 5 minutes. Remove the pork from the skillet and set aside.
  2. Add the onion, garlic, bell pepper, snow peas, and carrots to the skillet. Cook for 3-4 minutes, until the vegetables are softened.
  3. Stir in the ginger, chicken broth, soy sauce, fish sauce, brown sugar, red pepper flakes, and black pepper. Bring to a boil, then reduce the heat to low and simmer for 5 minutes.

  5. Stir in the cooked pork and cook for an additional 2-3 minutes, until heated through.
