Ingredients

  • 1 lb. ground beef
  • 1/2 onion, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 package frozen tater tots (32 oz.)

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, brown the ground beef and onion over medium heat until the beef is cooked through.
  3. Drain the fat from the skillet.
  4. Add the black beans, corn, chili powder, garlic powder, cumin, and smoked paprika to the skillet and stir to combine.
  5. Add the salsa and sour cream and stir to combine.
  6. Add 1 cup of the cheese and stir to combine.
  7. Transfer the mixture to a 9 x 13 inch baking dish.
  8. Top with the tater tots and sprinkle the remaining 1 cup of cheese on top.
  9. Bake for 30 minutes, or until the tater tots are golden brown and the cheese is melted.
  10. Let cool for 10 minutes before serving.
