Ingredients
- 1 lb. ground beef
- 1/2 onion, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/2 cup salsa
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 package frozen tater tots (32 oz.)
Directions
- Preheat the oven to 375°F.
- In a large skillet, brown the ground beef and onion over medium heat until the beef is cooked through.
- Drain the fat from the skillet.
- Add the black beans, corn, chili powder, garlic powder, cumin, and smoked paprika to the skillet and stir to combine.
- Add the salsa and sour cream and stir to combine.
- Add 1 cup of the cheese and stir to combine.
- Transfer the mixture to a 9 x 13 inch baking dish.
- Top with the tater tots and sprinkle the remaining 1 cup of cheese on top.
- Bake for 30 minutes, or until the tater tots are golden brown and the cheese is melted.
- Let cool for 10 minutes before serving.
