Roasted Bell Pepper Dressing

Ingredients

  • 2 bell peppers, any color, roasted
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 400F/200C.
  2. Cut bell peppers into quarters and remove the seeds.
  3. Place bell pepper quarters onto a baking sheet and bake in the preheated oven for 25 minutes.
  4. Remove from the oven and let cool.
  5. Place roasted bell peppers in a food processor and blend until smooth.
  6. Add olive oil, red wine vinegar, garlic, Dijon mustard, salt and pepper. Blend until smooth.
  7. Pour dressing into a glass jar and store in the refrigerator for up to 1 week.

  • Bell peppers are a great source of vitamins A and C.
  • The red, yellow and orange bell peppers are the same variety of pepper, but are picked at different stages of ripening.
  • Roasting bell peppers will bring out their natural sweetness.
