Ingredients
- 2 bell peppers, any color, roasted
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Directions
- Preheat oven to 400F/200C.
- Cut bell peppers into quarters and remove the seeds.
- Place bell pepper quarters onto a baking sheet and bake in the preheated oven for 25 minutes.
- Remove from the oven and let cool.
- Place roasted bell peppers in a food processor and blend until smooth.
- Add olive oil, red wine vinegar, garlic, Dijon mustard, salt and pepper. Blend until smooth.
- Pour dressing into a glass jar and store in the refrigerator for up to 1 week.

- Bell peppers are a great source of vitamins A and C.
- The red, yellow and orange bell peppers are the same variety of pepper, but are picked at different stages of ripening.
- Roasting bell peppers will bring out their natural sweetness.
