Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 tablespoons pesto
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Preheat the oven to 400°F and lightly grease a baking sheet.
  2. Wash and scrub the potatoes and cut them in half. Place them in a large bowl and add the olive oil, garlic, pesto, salt and pepper. Toss to combine.
  3. Arrange the potatoes on the prepared baking sheet in a single layer. Roast for 40 minutes, flipping the potatoes halfway through cooking.
  4. Remove the baking sheet from the oven and sprinkle the potatoes with the chopped parsley. Serve warm.
