Ingredients

  • 2 Tablespoons olive oil
  • 1 Medium onion, chopped
  • 2 Medium bell peppers, chopped
  • 2 Cloves garlic, minced
  • 1 Teaspoon ground cumin
  • 1 Teaspoon paprika
  • 1/2 Teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 Large eggs
  • Chopped fresh parsley, for garnish (optional)

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and bell peppers and cook, stirring occasionally, until the vegetables are lightly browned and softened, about 5 minutes.
  3. Add the garlic, cumin, paprika, and cinnamon and cook, stirring, until fragrant, about 1 minute.
  4. Season with salt and pepper to taste.
  5. Gently crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 2 minutes.
  6. Garnish with parsley, if desired, and serve warm.
