Ingredients

  • 3 pounds chicken wings
  • ¼ cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter

Directions

  1. Pat the chicken wings dry with paper towels and place in a large bowl.
  2. In a small bowl, mix together the olive oil, garlic, oregano, thyme, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the chicken wings and toss to coat evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  5. When ready to cook, preheat your smoker to 250°F.
  6. Place the chicken wings on the smoker rack and smoke for 2 hours.
  7. Remove the wings from the smoker and place in a large bowl. Add the butter and toss to coat evenly.
  8. Serve the wings with your favorite dipping sauce.
