Ingredients

  • 3 cups sticky rice
  • 3 cups coconut milk
  • 1 cup brown sugar
  • 1 teaspoon salt
  • Banana leaves cut into 4-inch squares

Directions

  1. In a saucepan, combine the sticky rice, coconut milk, brown sugar, and salt over medium heat.
  2. Bring to a boil, stirring occasionally until the mixture thickens and the rice is tender, about 20 minutes.
  3. Remove from heat and let cool for 10 minutes.
  4. Line a baking sheet with banana leaves and spoon the cooled biko mixture onto the leaves.
  5. Press the biko down firmly with the back of a spoon.
  6. Cover with more banana leaves and place in the refrigerator for at least 30 minutes.
  7. Cut the biko into squares and serve.
