Ingredients
3 cups sticky rice
3 cups coconut milk
1 cup brown sugar
1 teaspoon salt
Banana leaves cut into 4-inch squares
Directions
In a saucepan, combine the sticky rice, coconut milk, brown sugar, and salt over medium heat.
Bring to a boil, stirring occasionally until the mixture thickens and the rice is tender, about 20 minutes.
Remove from heat and let cool for 10 minutes.
Line a baking sheet with banana leaves and spoon the cooled biko mixture onto the leaves.
Press the biko down firmly with the back of a spoon.
Cover with more banana leaves and place in the refrigerator for at least 30 minutes.
Cut the biko into squares and serve.

Biko is also called sinukmani, which means “sweet rice” in Tagalog.
