Ingredients
1 lb salmon fillet, skinned and deboned
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons lemon juice
2 cloves garlic, minced
4 wraps or tortillas
1/2 cup plain Greek yogurt
2 tablespoons fresh dill, minced
1/2 cup red onion, diced
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, quartered
1/4 cup feta cheese, crumbled
Directions
Preheat oven to 400°F.
Place salmon on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
Bake for 15 minutes, or until the salmon is cooked through.
Remove from oven and let cool slightly. Flake the salmon into small pieces.
In a small bowl, whisk together lemon juice, garlic, salt and pepper.
In a separate bowl, combine yogurt, dill, red onion, cucumber, tomatoes and feta cheese.
Spread yogurt mixture on each wrap and top with flaked salmon.
Drizzle with lemon garlic mixture and wrap tightly.
Serve immediately.
