Ingredients
- 1 lb salmon fillet, skinned and deboned
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 4 wraps or tortillas
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh dill, minced
- 1/2 cup red onion, diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup feta cheese, crumbled
Directions
- Preheat oven to 400°F.
- Place salmon on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Bake for 15 minutes, or until the salmon is cooked through.
- Remove from oven and let cool slightly. Flake the salmon into small pieces.
- In a small bowl, whisk together lemon juice, garlic, salt and pepper.
- In a separate bowl, combine yogurt, dill, red onion, cucumber, tomatoes and feta cheese.
- Spread yogurt mixture on each wrap and top with flaked salmon.
- Drizzle with lemon garlic mixture and wrap tightly.
- Serve immediately.
