Ingredients

  • 2 boneless skinless chicken breasts
  • 1 teaspoon tarragon
  • 1 teaspoon dill
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/2 cup sliced red onion
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup balsamic vinaigrette

Directions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with tarragon and dill, and brush them with olive oil.
  3. Grill the chicken for about 5 minutes per side, or until cooked through.
  4. Let the chicken cool for a few minutes, then slice it into thin strips.
  5. In a large bowl, combine the chicken strips, cherry tomatoes, kalamata olives, feta cheese, parsley, mint, red onion, and blueberries.
