Ingredients

  • 3 tablespoons grated ginger root
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 cup white sugar
  • 3 tablespoons molasses
  • 1/2 cup lemon juice
  • 3 quarts boiling water

Directions

  1. Combine the ginger, cinnamon, nutmeg, cloves, allspice, sugar, molasses, and lemon juice in a large ceramic bowl.
  2. Add the boiling water and stir until all of the sugar has dissolved.
  3. Cover the bowl with a clean cloth and let it sit for 24 hours.
  4. Strain the mixture through a fine mesh strainer into a large pitcher or jug.
  5. Pour the ginger beer into individual bottles or glasses and serve.
