Ingredients

  • 2 red bell peppers, diced
  • 2 yellow bell peppers, diced
  • 2 tangerines, peeled and diced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, mix together the peppers, tangerines, olive oil, garlic, cumin, paprika, salt, and pepper.
  3. Spread the mixture on a baking sheet and bake for 20 minutes, stirring occasionally.
