Ingredients

  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 3/4 cup cooked bacon, chopped

Directions

  1. In a medium bowl, whisk together the flour, eggs, milk, and salt until smooth.
  2. Heat a non-stick skillet over medium-high heat. Grease the skillet with a bit of butter. Pour a scant 1/4 cup of the crepe batter into the skillet, swirling it to form an even layer.
  3. Cook the crepe until the top is dry and the edges are golden brown, about 1 minute. Flip the crepe and cook for another 30 seconds. Transfer to a plate and repeat with the remaining batter.
  4. In a medium saucepan, combine the maple syrup, brown sugar, and butter. Heat over medium heat until the butter is melted and the mixture is bubbling. Reduce the heat to low and cook for 5 minutes, stirring occasionally.
  5. Remove the pan from the heat and stir in the vanilla extract, heavy cream, and cooked bacon. Let the mixture cool for 10 minutes.
  6. To assemble the crepe stack, lay a crepe on a plate and spread a spoonful of the maple bacon custard over the top. Repeat with the remaining crepes and custard.
