Ingredients
- 1 cucumber
- 1 avocado
- 1 cup sushi rice
- 1/4 cup vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
Directions
- Prepare the sushi rice. Cook the rice according to the directions on the package. Once the rice is cooked, combine the vinegar, sugar and salt in a small bowl. Mix the vinegar mixture into the cooked rice and set aside.
- Slice the cucumber and avocado into thin strips.
- Lay a sheet of nori on a sushi rolling mat. Place a thin layer of sushi rice on the nori, leaving a small border around the edges. Arrange the cucumber and avocado strips on top of the rice.
- Roll the sushi into a log, using the sushi mat to help shape the roll. Repeat with the remaining ingredients.
- Cut the sushi rolls into individual slices and serve.
