Ingredients
4 large portobello mushrooms
1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup sliced black olives
1/4 cup chopped fresh parsley
1 teaspoon minced garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, whisk together olive oil, balsamic vinegar, garlic, basil, oregano, salt, and black pepper.
Remove stems from mushrooms, and brush mushrooms with oil mixture.
Place mushrooms on a baking sheet, and bake in preheated oven for 15 minutes.
Meanwhile, heat a large skillet over medium-high heat. Add onion, red bell pepper, and green bell pepper; cook and stir until tender, about 5 minutes.
Add olives, parsley, and remaining oil mixture; cook and stir until heated through, about 2 minutes.
Remove mushrooms from oven, and fill each with vegetable mixture. Place back into oven, and bake until mushrooms are tender, about 10 minutes.
Serve warm.
