Easy Banana Chia Blueberry Pancakes

Ingredients

  • 1 banana
  • 1/4 cup chia seeds
  • 1 cup blueberries
  • 1 cup almond milk
  • 2 tablespoons coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt

Directions

  1. In a blender, combine the banana, chia seeds, blueberries, almond milk, coconut oil, baking powder, cinnamon and salt.
  2. Blend until smooth.
  3. Heat a non-stick skillet or griddle over medium heat.
  4. Add about 1/4 cup of the batter to the skillet and spread it out into a circle.
  5. Cook for about 2 minutes until the edges are golden brown and the top is bubbly.
  6. Flip and cook for another 2 minutes.
  7. Repeat with the remaining batter.
  8. Serve with your favorite toppings.
