Ingredients
- 1 banana
- 1/4 cup chia seeds
- 1 cup blueberries
- 1 cup almond milk
- 2 tablespoons coconut oil
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon sea salt
Directions
- In a blender, combine the banana, chia seeds, blueberries, almond milk, coconut oil, baking powder, cinnamon and salt.
- Blend until smooth.
- Heat a non-stick skillet or griddle over medium heat.
- Add about 1/4 cup of the batter to the skillet and spread it out into a circle.
- Cook for about 2 minutes until the edges are golden brown and the top is bubbly.
- Flip and cook for another 2 minutes.
- Repeat with the remaining batter.
- Serve with your favorite toppings.
