Ingredients

  • 1/2 cup sun-dried tomatoes, packed in oil
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons freshly chopped basil

Directions

  1. In a food processor, combine the sun-dried tomatoes, pine nuts, and garlic. Pulse until the mixture is finely chopped.
  2. Add the olive oil, Parmesan cheese, salt, and pepper. Pulse until everything is well combined.
  3. Add the chopped basil and pulse until everything is combined. Taste and adjust seasoning as needed.
  4. Serve over pasta, salads, or as a dip for crusty bread.
