Ingredients

  • 1 ½ cups cooked white rice
  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup salsa
  • 2 cups Mexican cheese blend
  • Optional: Sour cream, guacamole, cilantro, and/or jalapeños for topping

Directions

  1. In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
  2. Add the cumin, chili powder, paprika, oregano, salt, and pepper to the beef mixture and stir to combine.
  3. Add the black beans, tomatoes, and salsa to the beef mixture and stir to combine.
  4. Reduce the heat to low and let the mixture simmer for 15 minutes.
  5. Add the cooked rice to the beef mixture and stir to combine.
  6. Sprinkle the cheese over the top of the mixture and cover the skillet with a lid.
  7. Let the cheese melt for 5 minutes, then serve with your favorite toppings.
