Ingredients
- 1 ½ cups cooked white rice
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup salsa
- 2 cups Mexican cheese blend
- Optional: Sour cream, guacamole, cilantro, and/or jalapeños for topping
Directions
- In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
- Add the cumin, chili powder, paprika, oregano, salt, and pepper to the beef mixture and stir to combine.
- Add the black beans, tomatoes, and salsa to the beef mixture and stir to combine.
- Reduce the heat to low and let the mixture simmer for 15 minutes.
- Add the cooked rice to the beef mixture and stir to combine.
- Sprinkle the cheese over the top of the mixture and cover the skillet with a lid.
- Let the cheese melt for 5 minutes, then serve with your favorite toppings.
