Ingredients

  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • Tortilla chips, for serving

Directions

  1. In a medium bowl, combine the black-eyed peas, onion, bell pepper, garlic, olive oil, chili powder, and cumin. Season with salt and pepper, to taste.
  2. Heat a large skillet over medium-high heat. Add the black-eyed pea mixture and cook until the vegetables are softened, about 5-7 minutes. Stir in the cilantro.
  3. Transfer the dip to a serving bowl and garnish with additional cilantro, if desired. Serve with tortilla chips.
