1 (15-ounce) can black-eyed peas, drained and rinsed
1/4 cup diced onion
1/4 cup diced red bell pepper
1 garlic clove, minced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
Salt and pepper, to taste
1/4 cup chopped fresh cilantro
Tortilla chips, for serving
Directions
In a medium bowl, combine the black-eyed peas, onion, bell pepper, garlic, olive oil, chili powder, and cumin. Season with salt and pepper, to taste.
Heat a large skillet over medium-high heat. Add the black-eyed pea mixture and cook until the vegetables are softened, about 5-7 minutes. Stir in the cilantro.
Transfer the dip to a serving bowl and garnish with additional cilantro, if desired. Serve with tortilla chips.
