- 1/4 cup diced red bell pepper
- 1 garlic clove, minced
- 1 tablespoon olive oil

- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro
- Tortilla chips, for serving
Directions
- In a medium bowl, combine the black-eyed peas, onion, bell pepper, garlic, olive oil, chili powder, and cumin. Season with salt and pepper, to taste.
- Heat a large skillet over medium-high heat. Add the black-eyed pea mixture and cook until the vegetables are softened, about 5-7 minutes. Stir in the cilantro.
- Transfer the dip to a serving bowl and garnish with additional cilantro, if desired. Serve with tortilla chips.
