Ingredients

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of salt
  • 2 boneless, skinless chicken breasts, diced
  • 1 onion, diced
  • 1 (16 ounce) package of frozen spinach, thawed and drained
  • 1/4 cup of heavy cream

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic, ginger, turmeric, cumin, cayenne pepper, and salt, and cook for 1 minute, stirring constantly.
  3. Add the chicken and onion, and cook for 8 minutes, stirring occasionally.
  4. Stir in the spinach and cook for 5 minutes, stirring occasionally.
  5. Stir in the cream and cook for 5 minutes, stirring occasionally.
  6. Serve hot.
